Easter Rolls and Menu Plan Monday 4/1

Happy April’s Fools Day!

I wanted to play a prank on you, but I am not that witty and can’t think of anything that has not been done before, so this is just a boring food post.

You’re welcome.

I was, and usually am, in charge of rolls for Easter Dinner, or any dinner.

This year we, well my sister, decided we should have a full turkey dinner for Easter.  During Thanksgiving time we ended up with 3 turkeys, two of them free.

and thought they were adorable!

The pin says just use a yeast roll recipe, pinch up the ears and poke holes for eyes.

Easy.  Right?

Wrong….

So the link on the pin takes you to someone’s Flickr account and there is just a picture.

To find some directions I Googled ‘Easter bunny rolls’ and found a bread making blog, Artisan Bread in Five Minutes.  What a perfect blog!  I am going to have to go back and search through it, because there is nothing I love more than bread!

Back to the rolls.  They wrote a post about these cute little bunnies, and they claim the above pin is really a COOKIE!

I know! I guess you can’t believe everything to see on the internet…

But I tried anyway, as they also did.

Menu Plan 4/1-4/7

Mon: Fresh Fish, my husband caught this past weekend, with pasta

Tue: We will be gone

Wed: One-Pot Chicken & Brown Rice

Thr: Sesame Beef

Fri: Pesto Chicken Tortellini Soup (but made with chicken in the soup and cheese tortellini instead)

Sat: Leftovers shall be consumed

Sun: Easy Pork Chops and Rice

Meal Plan Monday 3/18 and what happened to six months?

Six months ago I was in the hospital crying and swearing and about ready to punch a nurse in the face.

I was giving birth to this bundle of joy.

It was a labor intensive labor.  yep I went there.

They say the second one is supposed to be a breeze but Baby Sid decided to make it difficult.  However he has been a piece of cake ever since.  Such an easy baby, always happy or sleeping.

I do have to start him on solid food soon, which means I will be starting to share my baby food recipes with you as well.

I have been putting it off because nursing him is so much easier!  I know, what a lazy mom!

 

Menu Plan 3/18-3/14

Mon: Garlic Parmesan Chicken & Noodles (so easy!)

Tue: Country-Style Pork Loin with Arkansas Green Beans*

Wed: Wine Glazed Steak with couscous

Thr: Slow Cooker Chicken Alfredo Lasagna

Fri: Ian’s Birthday so we will be going out for dinner, but I will be making Cake Batter Pancakes for breakfast!

Sat: Ian’s birthday party, so no cooking dinner

Sun: Tacos with Mexican Green Rice

*Last Wed we ended up going out to eat, since I still had the pork roast I used the same recipe this week. I cut the amount of beans in this recipe, way too many for us.

We had a fun weekend and I was going to post about it but I need to go through the pictures.

But I didn’t want to put off sharing my menu plan.

Monday

Menu Plan 3/11-3/17

Mon: Oregon Fall Bacon & Cheese Meatloaf with Pepperjack Potatoes 

Tue: Sweet & Spicy Bacon Chicken with Creamy Garlic Noodles

Wed: Country  Style Pork Loin with Arkansas Green Beans   went to a birthday dinner

Thr: Dressed-up Sloppy Joes with Tater Tots

Fri: Probably not cooking

Sat: won’t be home for dinner

Sun: Breaded Parmesan Ranch Chicken with Parmesan Rice

Menu Plan Monday March 4th

So this is a casserole week.

Since I started back to work, I am working four days a week.  I decided Wednesdays should be my day off.  Last week we were sitting at home and while the sun wasn’t shining, it wasn’t raining.  I was contemplating where to take the boys to let Ian run off some energy when I noticed he had a fever.

He wouldn’t eat breakfast, and then asked for some yogurt, which I happily gave him.  Come nap time we had some issues and he asked me to lie with him, so I did.  He was crying and I was trying to comfort him when started throwing up.

On his pillow.  On his blankets.  On me.  All over his bed.  He just kept throwing up, and crying.

I was trying to comfort him but also let him get it all out.  It was HORRIBLE!

I had to give him a shower and strip his bed, and when he was all clean he fell asleep on the couch.

He didn’t have any other episodes but held on to the fever till the next morning.  In the mean time, I came down with a cold.  Yep, head congestion, runny nose, cough, sore throat, but nothing in my tummy. Whew!

While my son was getting better, I was getting worse.  Which means I did not cook the rest of the week!  So you might notice that this coming Sunday I have planned the same thing as I did last Sunday because I still have the fish in the freezer.  I decided to cook all casseroles this work week because I am still not really better and they are easy to plan.  No thinking involved!

This weekend we spent a lot of time building our Lego City, because let’s face it, I wasn’t getting off the couch, or the floor.

Mon: Buffalo Chicken Bake

Tue: Taco Bake

Wed: Easy Beer Mac & Cheese with Chicken casserole

Thr: Sausage Spinach Alfredo Lasagna 

Fri: I will just admit it now, that I probably won’t cook on Fri

Sat: Kitchen is CLOSED

Sun: Roast Cod with Garlic butter & Creamy Garlic Pasta
