Sid loves tacos.  I can’t believe how much he loves tacos.  Almost every night when I pick him up from the sitter he says we are having some kind of tacos.  Usually he asks for ‘bacon tacos’ something I have never made.  When pretending to cook, he is usually cooking tacos, recently it was chicken tacos, but he has also made waffle tacos.

So I figured he needed some tacos this week for dinner.  Tonight I am going to a book signing event so Dad has charge of dinner, and after him working all day I decided pizza was a great idea.  I admit right now that I am sure I will stick to making soup on Sunday, but I am gonna try!

Menu Plan 3/02-3/08

Mon: Pizza

Tues: Tacos

Wed: Parmesan Chicken Bites with Cacio e Pepe

Thr: Beefy Sour Cream Noodle Bake

Fri: Leftovers

Sat: Kitchen is closed

Sun: Chicken Cordon Bleu Soup

Happy Cooking

Menu Plan Monday Feb 16th

Happy Presidents Day!

I am so happy for this holiday right now.  I really need to finish up making Ian’s invitations.  Cause they need to get in the mail this week.  So I will be doing a lot of crafting today.

But that also means that I planned something for dinner that takes a little more effort, because I have the time.  I am always so rushed during the week that I like to make something a little more time-consuming on my days off.

I wanted to cook something different with ground beef, and boy was I having a hard time finding something new.  I am taking the recipe on Wed, and changing it to ground beef instead of chicken.  That recipe is also gluten-free and works for a Paleo diet, I however, will be altering it because my family is neither of those.

Menu Plan 2/16-2/22

Mon: Sweet & Spicy Bacon Wrapped Chicken with Sour Cream & Cheddar Baked Mashed Potatoes

Tues: Crock Pot Brown & Maple Sugar Pork Roast with One Pot Garlic Pasta

Wed: General Tso’s Meatballs over rice

Thr: One Pot Creamy Chicken Pasta

Fri: Leftovers

Sat: Kitchen is closed

Sun: Heavenly Halibut with Parmesan Rice

Happy Cooking

Menu Plan Monday Feb 9th

I planned on making my husband chili yesterday but changed my mind.

I moved the stove and fridge and did a major deep clean in the kitchen.  The last thing I wanted to do was make chili.  Plus I didn’t really have time.  So I made some meatloaf and pepper jack potatoes, and Mac & Cheese for the boys (they don’t like potatoes).

Ian: what are you making for dinner
Me: Meatloaf
Ian: I don’t like meatloaf
Me: you don’t like anything.
Ian: can I have spirals?
Me: yes I am gonna make you spirals
Ian (to Sid): Mama’s making meatloaf, but I’m gonna have spirals
Me: you are also going to have meatloaf
Ian: but I don’t like meatloaf
…cut to end of dinner…
Me: Ian, do you want more spirals?
Ian: no, but can I have more meatloaf?

So I have my chicken tortellini soup back on the menu for tonight.

I had to share Sid looking so big at the movie theater.

Menu Plan Monday Feb 2nd

I have been super busy on creating some party decorations this past week.

I got an order from my Etsy shop to create a customized pack, which has been super fun.  And I am starting on the decorations for Ian’s birthday party next month.  I feel like I am so far behind! But the invitations are coming along, and I swear they have fewer pieces than last year.

Luckily one thing I don’t have to think too hard about is meal planning.  I can quickly decide what to make for the next week or three or more using my favorite menu planning program Plan to Eat.
