Heat Wave Menu Plan Monday July 1

Updated July 2nd

It’s July.  And boy oh boy is it July!

We are in the middle of a heat wave here in the Pacific Northwest.  We went from sixty degree temperatures to ninety degree temperatures in about an hour.

OK, so it was really a day or two, but the change was drastic and quick.

Of course hot weather means we are spending our days at my moms in her pool.

Of course all this hot weather meant I had to redo my menu plan.

I had previously planned for the whole month, but it is way too hot to use the oven.  So I came up with a new plan, which, if I am honest with you, I might not stick to.

Menu Plan 7/1-7/7

Mon: We won’t be home, so I don’t know what we will end up doing

Tue: Chicken Pesto Wraps (carry over from last week) with chips

Wed: Pepper Jack Pulled Pork Sandwiches with salad

Thr: Caesar Chicken Burgers with pasta salad (not sure what kind yet)

Fri: Wine Glazed Steak with mashed potatoes

Sat: Left overs

Sun: Philly Cheese Steak Sloppy Joes with tater tots

Menu Plan Monday June 10

Summer time.

I love summer.

I am a sunshine kid, which is odd since I was raised in the rainy Pacific Northwest.  But we do have glorious summers.

However, summer means the last thing I want to do is be inside on my computer.  So it took me a little while to plan our meals for the week.  To remedy this problem I think I will need to sit down one evening this week and plan my meals for the rest of the summer.

I know, things will change, but at least if I have something to go on then I won’t be scrambling.  Like I did this week.

Of course summer time also means doing lots of stuff outside.  Which Ian LOVES! He would spend all day outside if he could.  Including trips to the park.

Menu Plan 6/10-6/16

Mon: Pepper-Lime Chicken served over rice

Tue: Pan-Seared Steak and Onions served with mashed potatoes

Wed: Grilled Chicken with Lemon Basil Pasta

Thr: Slow Cooked Jerk Pork with Caribbean Salsa Sandwiches

Fri: Chicken Parmesan Manicotti with garlic bread and green beans

Sat: Baby food cooking day

Sun: Father’s Day, so we will see what the Hubs wants to do

Menu Plan Monday June 3rd

Well it is already June.  I am not sure where half the year went.

This past weekend Ian got to go fishing for the first time.  He has wanted to go fishing with Dad for a while now, and we finally had the opportunity to take him.

The friend Ty usually goes fishing with had a good-sized boat (no I don’t know the what size).  But it fit six of us, he brought his two daughters.

The fishing was slow, we caught four trout but one had to go back.  The kids got to reel in all the fish.

Ian had a great time, he loved being on the boat.  It was a wonderful day.

Menu Plan 6/3-6/9

Mon: Chili (we ended up having pizza last Fri, so this is a carry over)

Tue: Chicken Bacon Ranch Quesadillas

Wed: Mike’s Clam Chowder (for hubby) and Creamy Cajun Chicken Pasta (for me)

Thr: Sloppy Joe’s with tater tots

Fri: Baked Ravioli with meat sauce

Sat: kitchen is closed

Sun: Beef Bourguignon with Buttermilk Mashed Potatoes and Cheesy Garlic Biscuits

Menu Plan Monday May 27

I love long weekends.

I hate long weekends.

Having an extra day off is both wonderful and horrible.  I love having it, but it makes it that much harder to return to work.

You try to cram all these plans into one extra day!

This weekend my brother and his family came to town and now I am exhausted.  The kids are exhausted.  But I am sure we are not as exhausted as my brother is, since they had to travel.

Plus I get my days all confused, thus the reason I am posting this on a Tuesday.

My hubby is working late all week, so I have to pick up the kids and rush home to make dinner then feed them.  And I mean literally put food in their mouths.  Since I won’t have any help during this time, I am making simple food.  Well, I have Wed. off so I can spend some time cooking during the day.

The best part about this weekend was having all the kids together.  They were super adorable!

Wed: Beer Marinated Pork Chops with Cheese Topping and Creamy Garlic Pasta

Sun: Cajun Chicken Stuffed with Pepper Jack Cheese & Spinach, Green Beans and Duchess Potatoes
