Why I need my own drill

Ian LOVES stuffed animals.  Always has and, I hope, always will.

This love of fluffy, furry, cuddly little friends has led to an abundance of them.  My sister loved to pawn my nieces old ones off on us.  We would be over there and he would be carrying one around and asked “I take dis home?” and Tante would say “of course you can!”

At first they all lived on his big bed, then when he moved to it they moved to his crib.  They would come out periodically for him to play with, but they were hard to get to.

I wanted somewhere they could live, to which he had access, but that would get them off the bed and out of the crib.  Baby Sid is going to need the crib soon and it is too hard to change the sheets with 50 stuffed animals living there.

I remember I had a stuffed animal hammock when I was a kid, so I went and got one for Ian’s room.  My husband had to put it up because of the need to drill holes in the wall.  The drill is his and he uses it for work, so it is usually not at home.

I told him I wanted it above the bed at a height where Ian could reach.  So I putt all the stuffed animals in it and showed Ian.  Later I came back and this was how I found him….

After my husband put it up, I didn’t like where it was because I thought it looked bad, not because I thought Ian would use it as a hammock!

Now I put them all away and he comes in to take them all out and then take the hammock down too….

If I had my own drill I would have been able to move it after realizing the location was bad.

This boy is going to give me a heart attack one day!

Philly Cheese Sloppy Joe Rolls ~ Menu Plan Monday Feb 4

So the other week I was supposed to make Philly Cheese Steak Sloppy Joes, which are fantastic by the way!  I don’t remember why, but I never did.  I was looking on-line for some new recipes and came across this one for Bacon Cheeseburger Buns, and I thought it would be great to combine these two recipes!  And I did last week.

Except to make it a little easier I thought about using the premade refrigerated pizza dough, you know the kind that comes in the tubes that pop when you open it.  I got the idea from this recipe for Cheeseburger Flatbread Melts, which could be another version.

Philly Cheese Sloppy Joe Rolls

Ingredients:

1 medium onion chopped

1 medium bell pepper seeded and chopped; any color or combination

1/4 cup steak sauce

1 cup beef broth

salt and ground black pepper to taste

1 tablespoon butter

1 tablespoon flour

1 cup milk

1 cup provolone cheese shredded

11 oz thin crust pizza dough (or other refrigerated dough)

1 lb ground beef

Directions:

Cook ground beef while breaking it up into chunks with a spatula or spoon until browned, over med-high heat. Add the bell pepper and onion and cook for 3-4 minutes, until the onions start to become tender. Drain an excess liquid. Stir in steak sauce and beef broth, season with salt and pepper. Bring to a boil and cook until the mixture is thickened and bubbly.

Melt butter in a medium skillet over medium-high heat. Stir in flour and cook for 1 minute. Whisk in milk and cook until the mixture is thickened and bubbly. Remove from heat and stir in the cheese until it is melted and incorporated into the sauce.

Roll dough into an 12-in. x 8-in. rectangle; cut into 6-8 squares.  I actually used biscuits because that is what I had in the fridge.

Place 1/4 cup meat mixture in the center of each square add cheese sauce. Bring corners together in the center and pinch to seal.

Place 2 in. apart on greased baking sheets. Bake at 400° for 9-11 minutes or until lightly browned. Brush with butter. Serve with extra cheese sauce spooned over and enjoy.

Best laid plans….

Have you ever noticed how reality doesn’t match our expectations?

I have a plan on how my mornings should go, but some how that never happens.

 

This was my plan this morning:

5 am ~ semi-wake up to feed Baby Sid, then go back to sleep

6 am ~ get up, get coffee and pump

6:30 am ~ shower & get ready

7 am ~ feed Baby Sid again

7:20 am ~ turn van on to warm it up for the kidos

7:22 am ~ get Baby Sid changed and in his car seat ready to go

7:30 am ~ get Ian up and ready to go

7:40 am ~ calmly and efficiently load up kids to take to the sitters

 

Here is what REALLY happened:

4:40 am ~ Baby Sid wakes up and wants to eat

5:50 am ~ Ian goes to bathroom door crying “Mama, I need to see you a minute” not knowing my husband was the one in the shower.

5:52 am ~ Ian crawls into our bed, after I tell him where I was.

6 am ~ put Ian in his bed with a movie and something to drink

6:06 am ~ change Baby Sid and put him in the swing and hope he goes back to sleep

6:10 am ~ pump while drinking coffee (finally!)

6:15 am ~ Ian comes out of his bedroom wanting to ‘watch Tall Star Wars in da living room’

6:34 am ~ turn on Return of the Jedi

6:45 am ~ shower time

7 am ~ find Ian asleep on the couch, time for me to get ready

7:20 am ~ wake up Baby Sid and try to feed him

7:26 am ~ Baby Sid won’t eat take him to clean out his nose

7:31 am ~ try to feed Baby Sid again, still won’t eat

7:37 am ~ go out to start van

7:39 am ~ change Baby Sid, take some pictures because he is so cute and then put him in his car seat

7:42 am ~ run around the house in circles trying to locate everything we need and get my shoes on

7:55 am ~ put a sweatshirt on Ian and take the still sleeping boy out to car and buckle him in.

7:58 am ~ take Baby Sid out to car

7:50 am ~ make at least four trips back into the house to get things I had forgotten

8:02 am ~ leave for sitters house

 

Maybe Thursday will be easier….

Homemade Baby Food

I want what’s best for my children.  That’s why I have ruined my boobs by breast-feeding for more than a year and spend all that time pumping and washing pump parts.

When Ian started eating solid food I felt the brand Earth’s Best was, well, the best.  However, I found there was a lack of variety in the vegetables.  I couldn’t find a broccoli puree, there might have been one, but I couldn’t find it.  Gerber baby food had a lot of varieties but I preferred to buy organic.  Of course now there are more organic brands and a lot more variety.

I decided to start making my own.  Not only for the cost, but also to ensure my baby got a variety of foods and combinations.  I looked for some books to help me with ideas.  The first book I bought was Top 100 Baby Purees by Annabel Karmel.  She had some combinations that I wouldn’t have thought of like banana, avocado and yogurt.  I didn’t make things like green beans because it was easier to buy them.

I then found this book Super Baby Food by Ruth Yaron.  I like the book, but I don’t like her writing style.  She comes across as very condescending.  There are a lot of recipes for children over a year but not that many for baby purees.  I found it to be a good resource for the timing of different food introduction and storage.  One good thing is the Super Porridge she talks about.

This is a high protein porridge made with milled grains and legumes.  I started to make it and would mix in fruits and vegetables.  The combination that Ian liked best was banana and avocado with broccoli and sometimes green beans or peas.  After making the porridge I would run it through the blender again to make it more of a puree texture.

I know what you are thinking….YUCK! but he loved it, and still eats it.  I don’t always make it, just when I am concerned about his food intake.

Then the baby food companies came out with the food pouches (we call them smoothie pouches).  I think these things are the best thing ever!  Completely portable and they won’t break in the diaper bag.  Plus I can give one to Ian and he can feed himself.  I think they are great to keep on hand in the car for snack emergencies.

Over the last year there has been an influx of brands and food combinations available.  But they are pretty costly, usually about a buck and a half each.  So I had been trying to find a way to make reusable smoothie pouches for Ian’s porridge.

Of course I am too late.  I was at Babies R Us the other day to replace the car seats after the accident was wandering around the food prep area.  That is when I saw they had the Baby Bullet (which I had been thinking about getting) and what did I find on display with it?  Infantino has a new product line called Fresh Squeezed which has the Squeeze Station.

With the Squeeze Station you can fill your own smoothie pouches!  Now these ones are not reusable, but they do make a reusable one called the Keeper Squeeze Pouch, but they didn’t have that when I bought my Squeeze Station.  However, I will be purchasing a few of those too when I can find them.

So after purchasing the combination of Baby Bullet and Squeeze Station I went home and made Ian some porridge.

My one batch of porridge filled 7 pouches and it was really easy to use.  I am very excited about this!
