Meal Plan Monday April 15

Happy Tax Day!

Did you mail yours off?

I kept asking my husband if he was sure we didn’t need to go pick our taxes up and sign something.  He kept telling me that it was all electronic this year (this is the first year we don’t have a bunch of stuff that makes e-filing impossible).  I got a call on Sat, “this is a reminder you need to mail your state taxes in on Monday, so come by this weekend and pick them up”….

Once again it was a very busy weekend for us.  While I never made it to the store, I was able to make a meal plan for the next couple weeks.  Which includes a day for making baby food.

Meal Plan 4/15-4/21

Mon: Lemon Chicken Romano with Lemon Risotto

Tue: Parmesan Crusted Pesto Grilled Cheese Sandwich with Crockpot Tomato Basil Soup

Wed: Hubby’s Birthday so we are going OUT to dinner!

Thr: Pepperjack Pulled Pork Ciabatta Sandwich with some kinda veggie on the side

Fri: Crockpot Pesto Ranch Chicken with pasta

Sat: Baby Food Making Time!

Sun: Beer Marinated Pork Chops with Cheese Topping and Roasted Ranch Potatoes with Bacon and Cheese and Southern Biscuits

Meal Plan Monday April 8

Baby Sid has graduated to a highchair.  I am not as pleased about this as I should be, simply because we have no space in our dinning room for our highchair.  It has these folding legs that form a very large triangle.  It takes up SO much space.

But he is super cute in it. And Ian is happy to have him at the table.

Sometimes when I cook I don’t really use recipes.  This is gonna be that kinda week.  So my plan might help you with some ideas, but not so much with actual recipes.  Oh, and we are using a lot of hamburger meat…

Menu Plan 4/8-4/14

Mon: Spaghetti, no not the kind from a jar, but the kind I don’t have a recipe for

Tue: Beef Stew

Wed: Tacos

Thr: Sage Pork Chops with Parmesan Rice

Fri: Sloppy Joes (yes, I am singing the Adam Sandler song when I type it)

Sat: come on, you know I don’t make dinner on Sat…

Sun: Helping to host a baby shower so all my kitchen time will be devoted to that!

Easter Rolls and Menu Plan Monday 4/1

Happy April’s Fools Day!

I wanted to play a prank on you, but I am not that witty and can’t think of anything that has not been done before, so this is just a boring food post.

You’re welcome.

I was, and usually am, in charge of rolls for Easter Dinner, or any dinner.

This year we, well my sister, decided we should have a full turkey dinner for Easter.  During Thanksgiving time we ended up with 3 turkeys, two of them free.

and thought they were adorable!

The pin says just use a yeast roll recipe, pinch up the ears and poke holes for eyes.

Easy.  Right?

Wrong….

So the link on the pin takes you to someone’s Flickr account and there is just a picture.

To find some directions I Googled ‘Easter bunny rolls’ and found a bread making blog, Artisan Bread in Five Minutes.  What a perfect blog!  I am going to have to go back and search through it, because there is nothing I love more than bread!

Back to the rolls.  They wrote a post about these cute little bunnies, and they claim the above pin is really a COOKIE!

I know! I guess you can’t believe everything to see on the internet…

But I tried anyway, as they also did.

Mon: Fresh Fish, my husband caught this past weekend, with pasta

Tue: We will be gone

Wed: One-Pot Chicken & Brown Rice

Thr: Sesame Beef

Fri: Pesto Chicken Tortellini Soup (but made with chicken in the soup and cheese tortellini instead)

Sat: Leftovers shall be consumed

Sun: Easy Pork Chops and Rice

Non-Meal Plan Non-Monday

Last Friday was Ian’s 3rd birthday!

I can’t believe three years have gone by already.

He decided to have a superhero birthday party, which was the day after his birthday.

So I spent all last week trying to get everything together.

About 12:30 am on Saturday morning, while gluing candy boxes together, my nose started running and my throat started to hurt.

Come Sunday I admitted I was sick.  I have a cold.

So this week I have no plans to make dinner, I am just going to wing it.

The one thing I do know is I am going to try to make these rolls

for Easter dinner on Sunday at my moms house.

 

Birthday Party Success

As you can tell by this picture he had a great birthday.  Which I need to thank my mom for all her help with.

I wanted to get Ian’s birthday party pictures up by now, but this stupid cold has really got me sluggish.
