There was a time when I thought I would share my recipes with you. Like the ones I make up, or how I alter other recipes. But then I realized I am not a good food blogger or recipe writer. I am horrible about measuring ingredients, and I never take pictures while I am making it. I usually change things then forget to write down what I did.
Now I just share the recipes I find on-line with you, and most of the time I don’t make them exactly like the recipe states, but I don’t normally tell you about it. But this time I am.
Last week I planned on making Taco Lasagna from The Girl Who Ate Everything. I was intrigued because she used lasagna noodles instead of tortillas. The one problem I had with the recipe was that she used Ricotta cheese. Now, I love Ricotta cheese, I use it all the time in my Italian dishes, but I just couldn’t bring myself to use with taco ingredients.
I wanted to use something cheesy, and for a minute thought about cream cheese. Then I decided to mix some sour cream and jack cheese. I had still planned on using lasagna noodles, but my husband requested no more noodles for a while. So I just used tortillas. I don’t like salsa, because of the chunks of tomatoes in it, so I substitute for this Fiesta Dressing from a local restaurant.
So I substituted 1 cup of sour cream and 1 cup of pepper jack cheese for the ricotta cheese. I mixed the cheese with the sour cream and egg. I had left over mixture, and so that was too much. Maybe 1/2-3/4 cup of sour cream next time.
Well, see the food never looks good when I take pictures of it. Thus my failed food blogging career. But I will tell you it was very good. I am sure it is good with ricotta cheese, but I just couldn’t bring myself to do that…
