Meal Plan Monday 12/3 & Oreo Rice Krispies

My post the other day I shared a recipe I found for Peppermint Oreo Krispie Treats.  Yesterday I made a version of them and HOLY COW! they were delicious!

Ian had some and calls them ‘Christmas teats’ and asked for them this morning when he woke up.

I didn’t have time to go to Trader Joe’s to get the peppermint Joe Joe’s so I just used regular Oreos.

Oreo Cookie Rice Krispie Treats

ingredients:

6 cups Rice Krispies cereal
20 Oreo cookies, crushed/chopped (about 2 1/2 cups crushed)
6 cups mini marshmallows
4 Tablespoons butter

some melting chocolate for drizzling

directions:

Mix the crushed cookies and Rice Krispie Treats in a large bowl.  Grease a 9×13 inch pan, set aside.

Melt the butter and marshmallows over med-low heat until melted, adding marshmallows a cup at a time, stirring continuously.

OR Microwave the butter and marshmallows:

In another large, microwave safe bowl, add marshmallows and butter.
Microwave 2 1/2-3 minutes, or until the marshmallows are super fluffy, and melt together when stirred.  Stir together, until the marshmallows and butter are fully combined.

Grease a spatula to use for mixing.  Pour melted butter and marshmallow mixture over rice krispies and cookies.  Using the greased spatula mix until fully combined.

Very quickly pour mixture into greased pan spreading and flattening with greased spatula.

When treats are cooled drizzle with melted chocolate.  Allow chocolate to set before cutting.

Use greased cookie cutters to make fun shapes.

Tue 12/4:  French Dip Sandwiches (using left over roast beef)

Wed 12/5:  Chili

Thu 12/6:  Cheeseburger Flat Bread Melts (but using taco seasoning instead) and spanish rice

Fri 12/7:  Christmas Party

Sat 12/8:  Leftovers

Sun 12/9: Easy Pork Cops and Rice

Oreo Cookies in Rice Krispy Treats…Genius!

Crabby boys, sleepy mama and working on two different projects meant this post didn’t get finished yesterday.

Tis the season for baking!!  I could really go for some Christmas cookies right now.  Wink, wink.

It is apparent the holiday season is upon us if you have been to Pinterst lately.  There are all sorts of wonderful Christmas cookie/dessert recipes and decorating ideas.

I found one last night that I just HAD to share!  Peppermint Oreo Krispy Treats, that’s right Oreo cookies in marshmallow goodness.  Can you say super yummy!  I haven’t made them yet, but I plan to this weekend to take to our friends house when we get our Christmas tree.

I don’t repin recipes to Pinterest, I just save them in my Plan to Eat recipe book.  That way when I want to cook them it is easy to add to my meal plan and shopping list.

Since I haven’t made them yet I don’t have a picture to show you and I didn’t want to steal the authors, so here is my mixer which will get plenty of use this holiday season.

Meal Plan Monday

As I discussed last Monday I use a meal planning program to plan out my meals for the moth or week.

The program I use is an online program that stores recipes and has a drag and drop style planner.  Once the meals are planned it generates a shopping list which you can edit and move items to a pantry list.  There are many other features that I really like; the ability to share recipes with other members, easy importing from websites or blogs, and many others.

Week of 11/26-12-2

Mon:  Chicken Carbonara and Zucchini Frittata

Tue:  Tequila Lime Pork Fajita

Wed:  Fauxtisserie Chicken with Mac & Cheese (with butternut squash puree)

Thr:  Baked Creamy Chicken Taquitos

Fri:  Sautéed Pork Cutlets with  Pepperjack Potatoes

Sat: Leftovers

Sun:  Lasagna Soup

Meal Plan Monday

Figuring out what to cook is the hardest part for me.

I wanted a program that would plan my meals for me from a list.  So far I haven’t found one like that, but I did find one that I like to use.  It is not a free program, but it is a reasonably priced one.

I figured if others are having a hard time trying to figure out what to cook, maybe they will gain inspiration from what I am about to cook.

Thursday 11/22:  Thanksgiving – I am bringing mashed potatoes and rolls

Friday 11/23: Mashed Potato Sausage Bake

Saturday 11/24:  Leftovers

Sunday 11/25: Pulled Pork Sandwiches with Coleslaw
