I do hope everyone had a wonderful holiday yesterday.
We were at my mom’s for brunch, a very rainy egg hunt and then my sister made lasagna for dinner. It was great to spend the day with family.
I have been a little absent in writing lately. I had to get through Ian’s party last week so all my time was occupied on that. I actually had a couple of meal plan posts written and ready to go but forgot to post them! oops.
So here we are back on track. I have another race this weekend. It is a race I did last year as well, but I am now doing the 10K distance (last year was only the 8k). This race was the second race I ever did and it is really fun to go back and do it again.
So while the distance isn’t far, the whole race experience is somewhat exhausting so I don’t plan on cooking anything to complicated. Maybe some take-out or something is in order.
Menu Plan 4/06-4/12
Mon: Roasted Chicken and Cacio e Pepe
Tues: Crock Pot Balsamic Pork Roast and couscous
Thr: Taco Tuesday, but on a Thursday
Fri: Left Overs
Sat: Family gathering at my Aunt’s. I will be bringing Pepperoni Pizza puffs, and this gluten-free version.
Sun: Race Day ~ Easy meal
