Menu Plan Monday March 4th

So this is a casserole week.

Since I started back to work, I am working four days a week.  I decided Wednesdays should be my day off.  Last week we were sitting at home and while the sun wasn’t shining, it wasn’t raining.  I was contemplating where to take the boys to let Ian run off some energy when I noticed he had a fever.

He wouldn’t eat breakfast, and then asked for some yogurt, which I happily gave him.  Come nap time we had some issues and he asked me to lie with him, so I did.  He was crying and I was trying to comfort him when started throwing up.

On his pillow.  On his blankets.  On me.  All over his bed.  He just kept throwing up, and crying.

I was trying to comfort him but also let him get it all out.  It was HORRIBLE!

I had to give him a shower and strip his bed, and when he was all clean he fell asleep on the couch.

He didn’t have any other episodes but held on to the fever till the next morning.  In the mean time, I came down with a cold.  Yep, head congestion, runny nose, cough, sore throat, but nothing in my tummy. Whew!

While my son was getting better, I was getting worse.  Which means I did not cook the rest of the week!  So you might notice that this coming Sunday I have planned the same thing as I did last Sunday because I still have the fish in the freezer.  I decided to cook all casseroles this work week because I am still not really better and they are easy to plan.  No thinking involved!

This weekend we spent a lot of time building our Lego City, because let’s face it, I wasn’t getting off the couch, or the floor.

Menu Plan 3/4-3/10

Mon: Buffalo Chicken Bake

Tue: Taco Bake

Wed: Easy Beer Mac & Cheese with Chicken casserole

Thr: Sausage Spinach Alfredo Lasagna 

Fri: I will just admit it now, that I probably won’t cook on Fri

Sat: Kitchen is CLOSED

Sun: Roast Cod with Garlic butter & Creamy Garlic Pasta

Menu Plan Monday Feb 25

Ian and I decided to make some cookies last week when we were at my mom’s house.  I let him pick out the cookie cutters…

Menu Plan 2/25-3/3

Mon: Braised Herb-Crusted Pork Tenderloin with Vegetables served with mashed potatoes or rice

Tue: Breaded Parmesan Ranch Chicken served with pasta

Wed: Beef Bourguignon served with baked potatoes

Thr: French dip sandwiches with left-over roast beef

Fri: Crockpot Lasagna Soup

Sat: Kitchen is CLOSED

Sun: Roast Cod with butter served with pasta

Pinterest Recipes & Meal Plan Monday 2/11

As we all know Pinterest has an abundance of recipes!

Typically I don’t pin the recipes I find, I just go to the original site and save it in Plan to Eat recipe book.  Lately I have felt in a cooking rut and needed some new recipes so I, of course, turned to Pinterest.

I started a new recipe board and started pinning.

Pinterest people LOVE chicken!

I thought about planning this weeks menu with nothing but new Pinterest recipes but it was too much chicken.  So there are four out of the six cooking days that are recipes from Pinterest.

I don’t have that many recipes on there yet, in my defense it takes a long time to filter through all the dessert recipes.

 

Meal Plan Monday Feb 11-Feb 17th

Mon: Buffalo Balls with rice

Tue: Creamy Italian Potato soup

Wed: Garlic Cheddar Chicken with Creamy Garlic Pasta

Thr: Wine Gazed Steak with Parmesan Rice (my new FAVORITE rice)

Fri: Do-Ahead Ravioli Sausage Lasagna

Sat: I ain’t cookin’

Sun: Buffalo Chicken Bake

I wasn’t able to eat Buffalo Sauce while I was pregnant, I got really bad heartburn, but then again I got heartburn from water….

I had something with Buffalo Sauce the other day and realized how much I missed it.  No reason I can’t eat it now!  So, yes there are two recipes that calls for Frank’s Red Hot Sauce!

Sat: no cooking for me!

Sun: Stuffed Shells with Easy Parmesan Knots

 

Easy cooking week to help me ease back into working.  I didn’t plan side dishes this week, but that doesn’t mean we won’t have them when needed!
