Menu Plan Monday Oct. 28 ~ Chicken Noodle Soup Recipe

It is that time of year for soup.

My husband asked me to make a pot of chicken noodle soup, so we can freeze a bunch of it.

I got this recipe from my mom, and have been making it for years.  She got the recipe from her Grandmother and had been making it for decades.

But let’s be honest, it is nothing fancy, so I am sure your grandmother had the same recipe.

I love this recipe simply for the noodles.

Seriously. Look at those noodles. Don’t you just want to eat them up right now?  So doughy and creamy.

When I first made these I rolled them out and cut them with a knife like my mom did.  However they were as wide as the spoon I was supposed to eat them with.

I had the pasta attachment for my Kitchen Aid mixer, so the next time I made the soup I remembered that I had it and used it.

That time the noodles were too long….

I have since perfected my use of my pasta roller/cutter.

Chicken Noodle Soup

1 whole fryer chicken
2-3 32oz boxes of chicken broth
water
1 onion, chopped
3 cups flour
6 tbsp milk (preferably whole or half & half)
1 1/2 tsp salt
3 eggs

  • Wash chicken and place in a large stock pot with chopped onion.  Dump in chicken broth, add water until you get desired amount of broth.  Make sure the chicken is covered and remember the noodles will soak up some liquid.  If you have added a lot of water, more than a quart or so, you can add a couple of chicken bouillon cubes so as to not dilute the flavor.
    • If you don’t want to use chick broth, you can just use water and bouillon cubes; one cube per quart.  Don’t want to use bouillon because of sodium? You can find a recipe here for a broth mix.
  • Bring to a boil, turn down heat to med-low.  Cover and cook for 2-3 hours.
  • Beat eggs and milk together, add salt and flour.  Mix until dough forms, add more milk or flour if consistency is off.
  • Roll out dough on a floured surface and cut into strips, then cut strips to noodle length.  Let dry out a couple of hours while chicken is cooking.
  • Remove chicken from stock.  Allow chicken to cool, and remove meat.  Shred meat and return to stock.  Season with parsley, salt and pepper.  Bring stock to a boil and add noodles.  Cook until noodles are soft, about 10-15 min.

Wed: Spaghetti with Meat Sauce

Thr: Halloween, so we will probably eat a bunch of candy

Fri: Leftovers 

Sat: Kitchen is Closed

Sun: Garlic Cheddar Chicken with Skillet Creamy Mac & Cheese I found some great looking green beans at the store so I changed the plan to make Chicken, Green Beans & Potatoes

Menu Plan Monday Oct. 21

 

 

 

It seems like now that fall is here one of the boys is always sick.

This weekend Baby Sid had a stomach virus and the cold that everyone else has had.  He was not a happy camper this weekend.

Because of him not feeling well, he didn’t get to go to the pumpkin patch with Ian’s school.  I really wanted to take some pictures of Sid with the pumpkins, so I guess we will have to make a third trip!

My mom ended up doing dinner on Sunday for my Grandma & Sister’s birthdays so I carried over my plans for dinner to Monday.  I was happy to have dinner in the crockpot when I got home from work, since I was exhausted.

 

Menu Plan 10/21-10/27

Mon: Beef Bourguignon with Cheesy Potato Casserole (carry over from previous week)

Tue: Sweet & Spicy Bacon Chicken with Parmesan Rice

Wed: Tacos

Thr: Garlic Parmesan Chicken and Noodles 

Fri: Leftovers 

Sat: Kitchen is Closed

Sun: Sage Pork Chops with Parmesan Garlic Orzo

It’s my party and I can cry if I want to

A little known fact about me: I am a crier.

I cry. All the time. About everything.

I cry when I am happy.  I cry when I am mad.  I cry when I am scared or hurt.  I cry when I laugh.  I cry when I watch movies, TV, or commercials.   I cry when I read.  I cry when I am frustrated.  I, of course, cry when I am sad.  I cry [insert emotion here].

I cry. I cry. I cry.

I don’t cry, however, when I cut onions.

The other day I was reading a blog post a woman wrote and I started crying.  While at work.  Earlier the same day I dropped off a very tired three-year-old boy at preschool and there was an incident at the hand-washing sink that made him cry.  Mostly because he was so exhausted he didn’t know how to deal with his emotions.

As I was leaving I felt bad because I knew he was going to have a particularly rough day, and predicted there would be quite a few tears shed that day.  So that day really got me thinking about crying. And boys crying.

I have two boys.  And I HATE that phrase “boys don’t cry”.

My husband sometimes cry and he is a boy.  (But don’t tell him I told you…About the crying part.)

I understand the need for men to be men and all that garbage.  But who decided that showing you emotions are not manly?  Some other man probably.

Ahh…but I digress.

I have never wanted my son to think he couldn’t cry about something, when his emotional response was to cry.  Don’t get me wrong, I don’t want a child, be it boy or girl, who cries about EVERYTHING.  But I don’t want my child to be so embarrassed about crying that he doesn’t learn to share his emotions.  And he is three, he is gonna cry about things.

So when he gets upset about something and starts crying, I have never told him to stop.  My response is that I need him to calm down.  He often gets more emotional when he is tired, come on, we all do.  When this is the case I tell him “I know you are tired but I need you to calm down so we can talk about it.”

I know, sounds like a lot of “new age” (is that even a term now?) mumbojumbo.  A little too ‘get in touch with your sensitive side.’

However, it works.  If he is throwing a fit or got hurt or is just so upset about something and doesn’t know how to express it, these words helps him.  Sometimes I say “slow down, breathe slowly and try to calm down.”  Cause you know how kids can get when they are crying so much they start to hyperventilate.

Of course sometimes he says “I canna calm down, I cryin’ too hard” which is just adorable!  After someone else has stopped crying he will ask me “did dey calm down now?”  Isn’t he just the cutest?

I still have to get mad at my husband sometimes when he tells Ian to ‘stop crying’ because that is not the road I want us to travel.  We should all be able to cry when we want to.  When he is just throwing a temper-tantrum I just tell him we can talk or do whatever, when he calms down.  It is hard not to say “when you stop crying” but I really don’t want to use those words.

I try to validate his feelings and let him know it’s OK to have them, but eventually he needs to stop the tears so the day can go on.

So I say, let it out.  Cry. Cry often and cry hard, if that is what is called for.  Be you man, woman or child.  Don’t be ashamed to let others see you cry.  Carry your hankie embroidered with your initial on it, and cry.

Menu Plan Monday Oct. 14

Here in the Pacific Northwest it rains.  A lot.

So when we get a nice day or weekend we have to take advantage of it.  Because we never know when it will come again.

We had a gorgeous day on Sunday so off to the pumpkin patch we went.  We are scheduled to go to the pumpkin patch with Ian’s school.  I was afraid it might rain that day which would be bad for Baby Sid.

I didn’t want Baby Sid to miss out, so this year we will have two pumpkin patch visits in the scrapbook.

Ian’s favorite thing was this slide, once he tried to climb up it, and so did my little climber Sid.  I am pretty sure Sid would have climbed to the top if I had let him.

 

 

Menu Plan 10/14-10/20

Mon: Easy Chicken Noodles (recipe altered to use crock pot)

Tue: Meatloaf and Potatoes 

Wed: Sloppy Joe’s with…. what do you eat with sloppy joes’s that are not potatoes? probably just salad

Thr: Crock Post Pesto Ranch Chicken with noodles

Fri: Leftovers 

Sat: Kitchen is Closed

Sun: Beef Bourguignon with Cheesy Potato Casserole (hubby’s new favorite side dish)
