Menu Plan Monday Aug 24th

Today is Monday and I am back at work after the longest shortest weekend.  It wasn’t a long weekend, no holiday, no extra days off or anything.  The weeks before were hectic, we had a long 4 day weekend, me and the kids going out-of-town Fri-Mon, coming home to a husband out-of-town, me working on Tues.

Off Wed, taking my nieces and kids to OMSI & going to grocery store for upcoming camping trip.

Working Thurs (husband is still out-of-town till upcoming weekend, when I will be gone again) only to come home and pack for camping.

Work all day Friday, longer than expected, pick up boys. Stop at grocery store for three needed items (water, ice & newspaper), 40 minutes & 3 bathroom trips later leave store with water, ice, cookies, rice krispie treats and one missing shoe (no newspaper to start camp fire, but I did get a paper bag so it worked out).  Stop one mile down the road for another bathroom break and finally head up the mountain to meet up with my cousin and her kids for our weekend camping trip.

So I am back at work and not wanting to think about cooking or all the projects I have coming up, how summer is basically over.  How I completely missed out on August, school will be starting and Ian will be in Kindergarten.

I have meal planning I need to do, grocery shopping, bills to be paid, actual work at work that needs be done.  I have loads and loads of laundry at home because here in the Pac NW all the Forest are on fire (well it seems like it) and our camping trip was visited by smoke, so everything I brought with me smells like camp fire.  I am pretty sure the only I know is that we are having tacos tonight because it is the only thing I don’t have to go to the store to make.

*sigh* I feel to tired to think or do any of that….

 

but I have a plan!  Because Aug is almost over, I am going to sit down and figure out my meals for the rest of the year.  This seems pretty daunting when I put it like that it is.  But really it is only 4 months left, and each month has about 4 weeks and each week I only cook 5 meals.  And I don’t have to have new meals each month.  So really I need about 20-30 meals to organize over the next 4 months.

With Plan to Eat online meal planner it is super easy to do just that.

First I just go through all my recipes (400+ dinner recipes) and pick some that sound good and add them to my queue.

Here is where I will have the meals; main courses, side dishes, soups, back up, etc, that I will be adding to my planner over the next 4 months.

See the recipe? The little picture of the food? The check mark in the bottom left means ‘add to queue’ the clock means ‘add to planner’.  So when I am scrolling through my recipe book and see one that might be yummy, I just click on the check mark and it is added to my queue. Easy-peasy-lemon-breezy!

My next step is to plan.

So once my queue is full to my liking I head to the planner and I can just drag and drop the meals where I want them.  If I have a main course and a side dish, I drag both recipes to that day.  If it is something I don’t have an online recipe for, I can create my own note on the day to.

For every recipe I add to the planner the ingredients automatically get added to a shopping list for me.  I can then access that list from my phone while at the store.  I can also alter the list, adding and removing items as needed, like telling it that I already have water and won’t need to get it at the store.  If I say I have salt, then salt will not be added to my shopping list until I remove it from my shopping list.

I have been a member for over 4 years now and I absolutely love it.  It does take some time collecting recipes but I use it all the time, and I think it is very easy to use.  It is also really easy to share recipes with friends.  Plan to Eat offers a 30 day trial to see what they are like, and also you can do a month-to-month payment, but when you purchase a full year it is a much better price.  I will also let you know when they offer their black Friday 1/2 off sale! When I plan my month-long meal plans I will still post them on a weekly basis.

Menu Plan Monday Aug 3rd

I am in a recipe rut.

I can not find the desire or drive to cook.  I really don’t even want to bother with eating at this point, it is such a hassle!

So I have been trying really hard to find new things to cook, but they all look either to time consuming have too many ingredients or it is just to damn hot for me to turn the oven and stove on.

Everything I make is basically chicken, cheese and pasta.  I love summer, but I realized this year that my cooking really goes downhill in the summer.  I just don’t want to take the time.  Rant. Rant. Rant.  Listen to me complain…..

Sigh, get over it girl. I am grateful that I have the ability to make my family food, and to feed them. (but really I just want to feed them fall-spring and have someone else do it in the summer. Is that really too much to ask?)

Running Log ~ July 21st ~ lead feet

Lead Feet and Injuries

The heat, the humidity and the allergies have been hitting me pretty hard this summer and my runs have been getting slower.

The last week in June I started running early in the morning at the gym on the treadmill. It was horrible, but at least I was running, because when it was already 70° at 6 a.m. there was no way I was running outside that day.

But I had a virtual race and a long rung scheduled just before the July 4th holiday and didn’t want to do 8 miles on the treadmill.

So I got up early and hit the road, I picked a route next to the river for some cool air.

But my feet felt like lead weights.  It was still too hot, my allergies was making it hard to breathe.  It was the slowest run I had done in forever.

And I say that like I have been running forever…when really I started running again only a year and a half ago, and hadn’t run more than 8 miles before Aug of last year.

So I got my run done, and I was so disappointed in myself, but decided that I needed to get back to the gym and start using the treadmill again.  This way I can set my pace, turn a movie on and just keep going.

After the holiday we went on our friends boat and slammed my knee on the fishing pole rack.  I didn’t think it was that hard, it didn’t hurt, and I didn’t think anything of it.  Then I woke up in the middle of the night with excruciating pain in my knee.

I couldn’t keep it bent for more than a minute, two at the most.  If I hyperextended my leg it was equally painful, so when sleeping and stretching my leg I would wake in pain.

I couldn’t go up or down stairs, I couldn’t sit, and it was painful standing from a sitting position. I couldn’t drive without something propping my foot up (it was my left knee and I have an automatic). My leg at a 90° angle brought swear words flowing out of my mouth.

At first I didn’t realize what happened, how I hurt myself, but then I figured I must have bruised my kneecap (patella) when I hit the fishing pole rack.  I don’t know if you have ever bruised a bone, but it isn’t sunshine and daisy’s.  Walking was fine as long as I didn’t bend my leg too much, but running was out of the question.

That’s OK. I can rest an injury, as long as it isn’t too long…

Two weeks go by with no running and I can finally sit with my leg bent for longer than a few minutes.  I can do stairs, my knee still hurts, but it is healing.  I think I am finally safe to try running again…when I hurt my back and my allergies might really be a cold (but don’t tell anyone, cause I don’t actually get ‘colds’).

*sigh*

this too shall pass.

But I am feeling slightly depressed about not running. Okay, I am feeling really depressed about not running.  I am tired and I am grouchy. So this week is also going to be a rest week, and next week I will come back with a vengeance.

Going for a run is like having a cup of coffee... I'm much nicer after I've had one.

Menu Plan Monday July 6th

Remember that time I used to plan my meals for the week?

Yeah, I miss it too….

OK, what happened to June? In fact, what happened to the first half of the year?  I am not exactly sure how we just celebrated the 4th of July, because I am still in denial of the fact that it is July.

It has been unseasonably warm this year in the Pacific Northwest.  Typically we have a pretty rainy spring, and don’t get above 90 degrees until after the 4th of July.  This year it happened in June, and for the weeks now we have been hovering close to the 100 degree mark. Never reaching it, but getting close.

Don’t get me wrong, I am not complaining, but it does make for some serious feet dragging come dinner time.  The last thing I want to do is stand in my already hot kitchen and turn on something hotter to make my kitchen hotter just to feed my family.  I know, I know….

It also makes it really hard for me to want to plan meals, or think about meals, or cooking….can’t we just grill hamburgers and hot-dogs all summer long? I guess we can alternate some chicken in there sometimes.

But really, if I am gonna be honest with you, my real issues is that I am not home.  My mom has a pool and lives two miles from my house….

So when the temps get above 90 where do you think I am going to be spending those days? Or she will call me at work and tell me she picked my kids up from the sitters to bring them to her house to go swimming and everyone is going to BBQ at her house.  Works out great for me, but then I get in a no-cooking-no-grocery-shopping-rut.

Now I am out of everything and need to make dinner tonight.  So easy sandwiches is on the plan after a trip to store.  The rest of the week will be oven free and made with minimal heat.
