Happy Monday! You know what Monday brings, right? Menu planning!
So I realized this week that I haven’t posted a menu in over a year….that’s right, I am the worst. I can’t even promise that I have been planning all this time. Let me tell you I felt it when I didn’t though. I seriously can’t say it enough times, menu planning saves my sanity.
Starting this week we have both boys in baseball, and both of us working full-time. The Hubs also started a new job less than two weeks ago, so he is working tons. Time at home is becoming scarce. On a typical day Hubs gets home with the boys at 5:30ish, starts homework. I get home 6ish, starts dinner, try to start eating 6:45-7:00. And fingers crossed boys are fed, clean, read to, teeth brushed, in bed by 8:30.
It’s the dinner that kills me every time. Even when I have it planned, it still takes so much work, and now throw two baseball practices in two different places in the mix….we would be lucky to get in bed by 9:30, and I know we would eat a lot of pizza.
So I decided to try something new. And in comes Once A Month Meals to my rescue! I have been to the site before, and have some of their old menu plans but never used them. Their new site is amazing! Here is the low down: they plan out freezer meals for you to prepare on one day and freeze to use when needed. There is way more to the site, and I will go into that in another post, but for now go and take a preview yourself.
I spent yesterday preparing 5 different recipes that made enough for two dinners each. That’s 10 dinners I don’t have to think, or prepare. Perfect for baseball (and soccer, or any sport) season, and easy enough for The Hubs to pull out of the freezer and finish cooking! I still plan these meals in during the week, so I don’t plan something similar the day before. No one wants chicken pasta two nights in a row.
