When I was little we would go to Breakfast with Santa. Over the years the quality went down hill and we stopped going. Last year I wanted to take Ian, but looked into it too late.
This year I made sure we got tickets. We went to the McMenamins breakfast at the Crystal Ball Room.
Ian had a great time and loved the bouncing dance floor!
On Sunday I put together & shopped for the next two weeks’ dinner plans. It was easy to plan this far in advanced using the Plan to Eat online meal planner. If you sign up we can share recipes; all the ones from my meal plans are in my online recipe book.
Last Monday I had Easy Pork Chops and Rice planned for yesterday. This is a recipe that was taught to me by my Setp-Mom a long time ago. I am sure you can also find it on the inside label of Campbell’s soup.
Easy Pork Chops and Rice
Ingredients:
4 pork chops (can be bone-in or boneless just adjust cooking time for thickness)
1 can cream of mushroom soup
milk
1 can Beef Consume
1 cup of rice
2 Tbl butter
seasoning salt
salt & pepper
Directions:
Preheat oven 375º
Season pork chops with salt, pepper and seasoning salt. Brown on both sides and place in a deep casserole dish. (I use round corning ware dishes)
Prepare cream of mushroom soup as directed with milk and pour over the pork chops.
Add rice to another casserole dish with one can of consume and one can of water and two tablespoons of butter.
Cook both in oven for aprox one hour or until rice absorbs all liquid and pork chops are 160º
*I substituted shredded cheese for cheese curds because you have to live near or visit a cheese factory to get them. I made this a couple of weeks ago and because it uses two pounds of meat I froze half of the uncooked mixture. I will pull it out of the freezer and throw it in the oven.
My post the other day I shared a recipe I found for Peppermint Oreo Krispie Treats. Yesterday I made a version of them and HOLY COW! they were delicious!
Ian had some and calls them ‘Christmas teats’ and asked for them this morning when he woke up.
I didn’t have time to go to Trader Joe’s to get the peppermint Joe Joe’s so I just used regular Oreos.
Mix the crushed cookies and Rice Krispie Treats in a large bowl. Grease a 9×13 inch pan, set aside.
Melt the butter and marshmallows over med-low heat until melted, adding marshmallows a cup at a time, stirring continuously.
OR Microwave the butter and marshmallows:
In another large, microwave safe bowl, add marshmallows and butter.
Microwave 2 1/2-3 minutes, or until the marshmallows are super fluffy, and melt together when stirred. Stir together, until the marshmallows and butter are fully combined.
Grease a spatula to use for mixing. Pour melted butter and marshmallow mixture over rice krispies and cookies. Using the greased spatula mix until fully combined.
Very quickly pour mixture into greased pan spreading and flattening with greased spatula.
When treats are cooled drizzle with melted chocolate. Allow chocolate to set before cutting.
