Menu Plan Monday May 1st

 

Happy Monday!

I had thought I might spend some part of Sunday preparing a few more freezer meals from  Once A Month Meals.  But alas, the best laid plans of mice and men….

Saturday we had two baseball games at the same time and while helping with Sid’s I could feel the pain in my throat and burning in my lungs that told me I was not quite well.  I hate to say I am sick, as that never happens to me, but a little four-year old might have spread his germs to his mom.

So Sat evening I spent sleeping, Sun we had two birthday’s to celebrate so there went our day. No prepping for me. But not to worry, I still have items in the freezer to use.  But this Sun I will want to do some freezing as long as I can get to the store on Sat.

We have some rescheduling this week so there is baseball Mon, Tue & Thurs plus a grocery store trip. So I needed an easy meal on top of the freezer meals. Plus I know that I will be exhausted after work, since I am not entirely well.

Menu Plan Monday April 24th

Happy Menu Plan Monday!!!

 

This Sunday we have to go to a birthday party which means I don’t have to cook dinner! Hooray! It is birthday party pizza for us!

My Once A Month Meals are going great and this weekend I plan on making some more for the freezer. However this week I feel like I have an issue because I don’t like to have the same type of meat two nights in a row. I have a freezer chicken and a freezer pork planned as well as a pork roast….So Wed was hard to determine.

The meal I figured for last night (Sun) got discarded and I made tortellini with meat sauce, so I didn’t want to make spaghetti, or another Italian dish….and I don’t really want to make tortellini again, but it is what I came up with. Maybe I will change my mind in the next couple days though….maybe I will make Korean Beef for us and something else for the kids…

Menu Plan Monday April 17th

 

Happy Monday! You know what Monday brings, right? Menu planning!

I realized after the fact that last Sun was Easter, and we had planes with family, so I kept the Sun menu choice the same for this week.

Monday (today) is my Hubs birthday and I am unsure of what he wants for dinner, because he won’t make a decision. But whatever he picks, the kids will be having chicken with mac & cheese.

Last week I used two of my freezer meals that I discussed in last week’s post and it worked out great!  I had prepared five dinners from  Once A Month Meals that made enough for two dinners each. That’s 10 dinners I don’t have to think, or prepare. Both baseball nights was super easy dinners. The boys were in the bath while I finished up dinner. One night I even put the dinner in the oven before we left, so I only had to boil some noodles when we got home!

Menu Plan Monday April 10th

 

Happy Monday! You know what Monday brings, right? Menu planning!

So I realized this week that I haven’t posted a menu in over a year….that’s right, I am the worst. I can’t even promise that I have been planning all this time. Let me tell you I felt it when I didn’t though. I seriously can’t say it enough times, menu planning saves my sanity.

Starting this week we have both boys in baseball, and both of us working full-time. The Hubs also started a new job less than two weeks ago, so he is working tons. Time at home is becoming scarce.  On a typical day Hubs gets home with the boys at 5:30ish, starts homework. I get home 6ish, starts dinner, try to start eating 6:45-7:00.  And fingers crossed boys are fed, clean, read to, teeth brushed, in bed by 8:30.

It’s the dinner that kills me every time. Even when I have it planned, it still takes so much work, and now throw two baseball practices in two different places in the mix….we would be lucky to get in bed by 9:30, and I know we would eat a lot of pizza.

So I decided to try something new. And in comes Once A Month Meals to my rescue!  I have been to the site before, and have some of their old menu plans but never used them. Their new site is amazing! Here is the low down: they plan out freezer meals for you to prepare on one day and freeze to use when needed. There is way more to the site, and I will go into that in another post, but for now go and take a preview yourself.

I spent yesterday preparing 5 different recipes that made enough for two dinners each. That’s 10 dinners I don’t have to think, or prepare. Perfect for baseball (and soccer, or any sport) season, and easy enough for The Hubs to pull out of the freezer and finish cooking! I still plan these meals in during the week, so I don’t plan something similar the day before. No one wants chicken pasta two nights in a row.
